Blackberry, Thyme And Lemon Shrub

METHOD
- In a saucepan, combine the blackberries, sugar, thyme, and lemon zest.
- Cover with a lid and cook over low heat (induction setting 1) for 30 minutes to release the berry juices.
- Increase the heat to medium (induction setting 5) and cook for an additional 5 minutes.
- Stir in the lemon juice, sherry vinegar, and water, then simmer for 5 minutes, just before the mixture reaches a boil.
- Cover and let it rest for 12 hours or overnight.
- Strain the syrup and pour it into sterilised bottles.
Hints and tips
- A shrub is a non-alcoholic syrup crafted from fruit juice, sugar, and vinegar.
- To sterilise bottles, you can use the sterilise function on Miele steam ovens, or alternatively, steam the bottles upside down at 100°C for 10 minutes.
