Ingredients

Dough
  • 3 cups flour.
  • 1/4 cup vegetable oil.
  • 1/4 cup yogurt.
  • 1 cup warm milk (more if needed).
  • 1 1/2 tsp instant yeast.
  • 1 tsp salt.
  • 1 tsp sugar.

Stuffing
  • 250g ground lamb.
  • 1 onion, finely chopped.
  • 1 tomato, finely chopped.
  • 1/4 cup yogurt.
  • 1/4 cup pomegranate molasses.
  • 2 tbs pine nuts.
  • 1 tbs mixed spice.
  • 1 tsp salt.
  • 3 tbs tahini.

METHOD

  1. In a bowl, mix the milk, oil, and yogurt.
  2. In another bowl, mix the remaining dry ingredients of the dough.
  3. Add the wet ingredients to the dry ones and knead for ten minutes, then let the dough ferment for an hour until it doubles in size.
  4. Divide it according to the required amount, and it is best to let it ferment for an additional half hour after shaping.
  5. Baking time: 12 mins in a preheated oven at 200c.
