Ingredients

  • 500g (approximately 3 cups) blackberries.
  • 330g (1½ cups) white sugar.
  • 6 sprigs of thyme.
  • Zest and juice of 1 lemon.
  • 185ml (¾ cup) sherry vinegar.
  • 185ml (¾ cup) water.

5 minutes, plus overnight infusing time

METHOD

  1. In a saucepan, combine the blackberries, sugar, thyme, and lemon zest.
  2. Cover with a lid and cook over low heat (induction setting 1) for 30 minutes to release the berry juices.
  3. Increase the heat to medium (induction setting 5) and cook for an additional 5 minutes.
  4. Stir in the lemon juice, sherry vinegar, and water, then simmer for 5 minutes, just before the mixture reaches a boil.
  5. Cover and let it rest for 12 hours or overnight.
  6. Strain the syrup and pour it into sterilised bottles.

Hints and tips

  1. A shrub is a non-alcoholic syrup crafted from fruit juice, sugar, and vinegar.
  2. To sterilise bottles, you can use the sterilise function on Miele steam ovens, or alternatively, steam the bottles upside down at 100°C for 10 minutes.
