New York Cheesecake

Ingredients

Cheesecake
  • 500g cream cheese.
  • 3tbsp milk.
  • 20g soft butter.
  • 1 1/4 cup whipping cream.
  • 1 tbsp vanilla.
  • 1/2 lemon juice.
  • 1 tsp lemon zest.
  • 3 eggs.
  • 3/4 cup sugar.
  • 1/4 cup corn starch.

Biscuit
  • 100g biscuits.
  • 90g butter.
  • 2tbsp sugar.

METHOD

  1. Water-bath in a preheated oven at 180c for 50mins, then 10 mins when heat is off.
  2. Let it cool down at room temp for 2 hours then refrigerate for 6 hours.
